Mulberry (Morus spp.), a perennial plant crucial to sericulture, is widely cultivated in temperate, subtropical, and tropical regions, including East Africa. As a valuable resource for silkworms, mulberry leaves are integral to sericulture and also offer a range of health benefits. This paper explores the various methods for preparing mulberry herbal tea, its nutritional composition, and associated health benefits. The tea can be brewed using fresh or dried leaves through traditional methods, French press, or tea bags. Mulberry leaves are rich in antioxidants, vitamins, and minerals, contributing to immune support, anti-diabetic, anti-inflammatory, and anti-aging properties. Additionally, the leaves help regulate blood sugar, improve skin health, and provide cardiovascular benefits. Stability studies have shown that mulberry herbal tea retains its antioxidant properties across different preparation methods. Furthermore, consuming organic and fair-trade mulberry tea supports small-scale farmers and promotes sustainable agricultural practices.
